I have nothing to say about the Super Bowl. On Sunday, I did not watch with friends, I did not drink beer, and I did not eat any buffalo chicken dip. I did not even leave my house. I also did not watch the game - I read People magazine and looked up at the television during commercials and the halftime show. This dish is also arguably not Super Bowl food, but I feel like it kind of applies. It has got beef, cheese, spice, and a Southwestern flair. That is Super Bowl-esque - right?
Look guys, the Eagles were not playing. I had zero emotional investment.
Now that I have sold you on the incredible ambiance of my Super Bowl Sunday, let's get into the food, which really was awesome. This heat bomb is a great winter dish that is chockfull of protein, veggies, and flavor. Check out this Tamale Pie Recipe here.
The recipe might have a long list of ingredients, but there are very few prep steps and it bakes in the blink of an eye. If you find yourself snowed in on a week night, a bowl of this is a welcome blessing. During the recent Nor'easter, we tried this recipe out for the very first time, enjoying it while burrowed inside, peeking out the windows to watch the snow fall.
Steam rising out of the servings to indicate what lay ahead for us, our servings needed to sit on our plates for a minute before we could dive in. The pro to this heat bomb skillet: the last bite was still piping hot. No 'last bite, worst bite' here. The sweet tomatoes toned down the spices in the dish, and I honestly did not find the hot peppers to be, well, hot. The dish was so temperature hot from the oven that the spicy hot ingredients did not phase me. I loved how the mouthwatering, savory beef paired with the sweet corn topping, which had a nice crust on the outer edge. The corn bread was perfectly dense and soaked up all the juices from the beans and beef below. It also helped cool down the dish, and I was a big fan. My dad and I voted to add this to our recipe rotation.
Good thing too, since we are in for a lot more snow this week, and who knows how much after that. That groundhog really did us in. I am not pleased with him, nor the fact that year after year we continue to allow a rodent to trap us in ice. It does amuse me though that a few weeks ago I heard people complaining about how we really had not had any winter weather, just bitter cold with none of the picturesque frosty fun. Well, Winter heard and arrived in full force. I am not a meteorologist, but I feel like this is already more snow than we had all last year. I am okay with it in that, if it is going to be cold, at least make it worth my while. I would like to see some pretty snowflakes falling, have a nice excuse to make hot chocolate, and maybe go build a snowman if I really feel called outside (a rare sighting, for sure, but it is nice to keep the options open). That being said, I am not-so-patiently-but-quite-very-earnestly waiting for spring to thaw us out. As I write this, I sit in my standard blanket burrito, the cocoon that protects me from the chilly air. I am looking forward to the day I can bust out of it like a butterfly.
