When reflecting on her childhood, my mom raves about the sweets her mom would bake. There were traditional Pennsylvania Dutch confections, rhubarb pie, peach cobbler, apples dipped in batter and fried, you name it. I cannot remember all the German names, but it sounds like it was a really delicious time. Recently, my mom baked this blueberry cake for a fun breakfast treat and I have got to thank my Nana for sweetening up my Sunday morning.
My mom has this recipe tucked away in a little cookbook provided by my Nana's church in Berks County. It is splattered from years of baking, which really adds to the experience, in my opinion.
Melt-In-Your-Mouth Blueberry Cake:
Ingredients:
2 eggs, separated
1 c. of sugar
1/2 c. shortening
1/2 tsp. salt
1 tsp. vanilla
1/3 c. milk
1 1/2 c. sifted all-purpose flour
1 tsp. baking powder
1 1/2 c. blueberries
Prepare:
- Preheat oven to 350 degrees.
- Beat egg whites until stiff, add about 1/4 cup sugar and set aside. Cream shortening (1 stick of butter) and add in salt, vanilla, remaining sugar, and egg yolks. Beat until light and creamy. Sift flour and baking powder together. Add alternately to creamed mixture with the milk. Fold in the egg whites. Dust the blueberries with flour and add them into the mixture last.
- Pour the batter into a greased 8x8 inch pan. Sprinkle top of batter with a little sugar and cinnamon. Bake for 50 minutes. Serve warm.

The name of this cake is no joke. It is super moist, exploding sweet blueberry juice with every bite, and the cinnamon is such a nice touch. I am normally not a huge fan of blueberries, but I loved this! Paired with a hot cup of tea, it is the perfect weekend breakfast. I enjoyed it while sitting outside in the sun and reading. I just finished The Birds of Opulence by Crystal Wilkinson and I absolutely loved it. Five stars on GoodReads. I was enchanted by page one. The story is rich, the characters all have vivid personalities, and the plot unfolds magically. It is written in my favorite style of poetic prose, and I cannot recommend it enough.

Conor, my brother, arrives tomorrow! I confess, I am really excited to see him. I have been discussing the menu for his stay with my parents and wow, I wish he came and visited more. It is going to be a week filled with feasts.
