Homemade Pepper & Egg Sandwiches

Hello! Remember how I cannot eat pizza (cue devastating music)? You know I come prepared with a back-up. Every time my family orders pizza, I have my own special order so I do not feel left out of the love. I absolutely adore pepper and egg sandwiches. It is the simplest thing - strips of pepper and scrambled egg on a hoagie roll - but it is one of my favorite comfort meals. I cannot get enough.

Recently I found myself in New York for a few weeks to work, but of course I did not have a place there, so I had to figure out a living situation. As a result, I found myself couch surfing for a bit. And by "a bit" I mean for about a month. This was not new territory for me. The summer after my sophomore year of college, my university housing ended in May but I had a summer internship. I had no place of my own, so I slept on a couch or air mattress (depending on the day), provided by some people I knew. I did this for two months, sleeping in the Bronx and commuting to my job in Manhattan, and I survived. A few weeks doing the same thing now was nothing. I got this. In addition to those rockstar couch days, I have experienced an array of travel and living arrangements in between. I am not so delicate. So, I stayed with Shannon for a bit, popped over to KT and had that lovely dinner at Banc and, for my last six days of work travel, I had a plant sitting arrangement that gave me a place to stay.

The nice thing is, this place offered a kitchen to cook in. I planned my grocery list carefully so everything would last the right amount of days and give me the most flavor for the least cost. Then, I went to the store and bought a dozen eggs, a jar of roasted red peppers, a loaf of bread, and a pack of cheese. I had not originally meant to create a homestyle pepper and egg, I just figured eggs are tried and true and then I wanted to add in some veg. Every day, though, I became more convinced that I had made a genius selection.

I had no plans to put this meal on the blog, but after reveling in how awesome this pepper and egg sandwich tasted for six days in a row, I was like, "I gotta snap a pic and blog this." No, it is not fancy. It is about as college as it gets. No Michelin star restaurant would ever serve this messy delight, but here is the thing: it is a delight. It tastes so good. Plus, you've got your carb, you've got your protein and fat, and you've got your vegetable. Looks like a complete meal to me, and it tastes spectacular!

Homemade Pepper & Egg Sandwich

Serves: 1


Ingredients:

- 2 slices multigrain bread

- 3-4 slivers roasted red pepper

- spoonful of basil or Sicilian pesto

- 2 eggs

- dried oregano, to taste

- crushed red pepper flakes, to taste

- garlic powder, to taste

- Low-Moisture Part Skim Mozzarella Cheese, shredded, to taste

- EVOO

- Spicy Mustard


Preparation:

This recipe is not so much about science and precision as it is the joy of cooking. Turn on some good music and head to the stove.

Preheat the oven to 325 degrees and pop the slices of bread onto the rack. You could also toast it regularly, but I did not have a toaster, so I ran time back a bit and felt brilliant about it.

Dice peppers and pour them into medium bowl. Add in pesto, herbs, garlic, and eggs. Flip bread in the oven to get an even golden on it. Drizzle oil in a medium-sized pan and turn on low heat. Whip up egg mixture until it is evenly mixed and pour into pan. When eggs just start to turn white, add cheese like you would on a pizza. Flip bread to check doneness. Swirl eggs to scramble once cheese has melted a bit. Remove golden bread from the oven and slather one half with mustard while eggs finish. Scoop eggs on top, then top with second slice of bread. Enjoy!

It just like, I cannot stoop raving about it. It was ooey-gooey cheesy goodness melting in your mouth. A nice bite from the peppers, a hint of spice from the mustard and a zip from the pesto kept the flavors lively. I would describe this meal as beautifully uplifting and bright in taste. It keeps your appetite satisfied and your tastebuds happy. Making it was one of my favorite parts of each day during that week.
