Cucumbers are a big no-no for me, so can somebody please explain why I eagerly request this salad again and again, despite the fact that it is chockfull of them? Read on to discover the magic ingredient that saves the day!
I will say that I do feel a little guilty asking my mom to make this because it is a bit time-consuming. For this reason, it feels fair to request as a birthday or special occasion dinner, but otherwise I leave it up to be my mom's suggestion. That being said, it is so worth it. The key is the pesto. Using the tarragon really spices things up and gives the pesto a cooler, more refreshing flavor than the usual basil version. I am not hating on basil pesto, because anyone who knows me knows that it is my go-to condiment, I love it so much. I am simply saying that it is nice to try new things. Making key changes to a tried and true recipe can be a really fun, low-key way to do that.
This salad is so delicious in its simplicity. The savory chicken and fresh, zippy pesto brighten the dish, and sweet pignoli finish it off beautifully. I love how they counter the cool crunch of the crisp radishes. All those gorgeous flavors balance out the cucumber and make it acceptable. That is a pretty big deal. This is one of those salads that kind of makes you feel like a health goddess while you are eating it, but makes no sacrifice on the flavor factor. So, basically, it is my favorite kind of meal. Also, it brings the memory of warm weather all year-round, which is a Godsend as the days grow darker and colder.
My mom was feeling camera shy, but I am singing her praises for making this beautiful dinner, and on a regular week night, no less!
This is pretty much the only way I will eat a fresh cucumber. In all other instances, please pickle it first, tyvm!
Anyway, I got all four of my wisdom teeth yanked out of my mouth this morning, so I will not be eating crispy dishes like this salad for a bit. Please enjoy them for me, and have a great week! 😊
